This economy is especially hard on restaurants as people are eating out much less. Increasingly, it’s just not enough to serve good food these days. Choosy consumers want tasty food and sustainable menu choices – and they want to support restaurants that are responsible about their operations – recycling of bottles and food wastes, energy efficiency, water reduction. People actually do care and all things being equal, they’d much rather go somewhere that exhibits this type of shared commitment to the environment. This 4 week series will provide an overview of sustainable restaurant programs and opportunities, as well as potential for cost savings and marketing. The series will include sessions on (1) Recycling & Waste Management, (2) Energy & Waster Savings, (3) Sustainable Cuisine, and (4) Sustainable Restaurant PR and Marketing.
The instructors from Greener Results Consulting bring years of experience in greening the hospitality industry. Tom Griffin developed Virginia Green, the state’s voluntary green tourism program that features self-certification for restaurants and hotel facilities. Laura Wood Habr is a nationally-recognized sustainable restaurant specialist who happens to own and operate the Eco-Bistro Croc’s 19th Street Bistro in Virginia Beach. Both Tom and Laura are Green Consultants to the National Restaurant Association.
